Angel's Scrambled Eggs


Poor, dear Angel. He may not enjoy human food all that much, but that didn't stop him from making sure the other members of Angel Investigations got a nice breakfast. Angel's attractive, well-read, strong, and yes, Angel cooks. If Buffy had a brain in her head, she should have tackled him as he was leaving in season three.

1 tablespoon of margarine
4 eggs
1 tablespoon of water
1 tablespoon of milk
2 slices of Swiss cheese torn into small pieces


1. Break the four eggs into a bowl, making sure you don't get any shells in with them. Add the water and milk. Whisk the eggs with a fork until the yolks and whites are fully blended.

2. Put the margarine in a frying pan and set it on a range burner set to high. When the butter begins to melt, VERY CAREFULLY (do not burn yourself) take the pan by the handle and move it back and forth until the butter pretty much coats the bottom of the pan.

3. Carefully pour the egg mixture into the pan. Add the cheese to the eggs. Using a heat proof spatula, begin to move the eggs back and forth. The cheese should eventually melt into the eggs.

4. Keep the eggs in pretty much constant motion as they are cooking. Make sure they're cooked throughly. For me, I like them done until they're slightly brown and they squeak when the spatula chops through them. There shouldn't be any liquid left. Normally, this takes about 5 or 6 minutes, but ranges vary.

5. Take the pan off the heat and put the eggs on a plate. They're gonna be hot, so let them cool or you'll roast your tongue. You can either eat 'em as they are, or, if you're feeling daring, toast up some cheese bread and make a sandwich. I'm personally very fond of these on a quarter loaf of Asiago foccacia.

Makes enough for two.

Just to provide one other option: I usually use skim milk, no fat cheese, and that fake egg stuff. It actually still tastes pretty decent. Also, replacing the Swiss cheese with American works fine, as does using one slice of each.
